The Greek salad omelette reflects the true flavors of Greek cuisine. The creamy fluffy omelette is not only a tasty dish but also healthy. The lycopene in tomatoes may reduce the risk of cancer. We can have this dish as a breakfast with some bread as well as in a brunch or dinner as a side dish.

Ingredients:

Eggs: 6
Red onion:1 (Medium sized)
Cherry tomatoes: 6/7 pieces
Black olives: one handful
Parsley leaves: one handful
Olive oil: 2 tbsp
Feta cheese(crumbled): 50g
Salt: To taste
Black pepper: To taste
Fat free milk: 5 tbsp

Recipe:

Chop the parsley leaves.
Finely chop the red onions.
Chop the cherry tomatoes in halves.
In a big bowl whisk the eggs with salt, black pepper and parsley leaves.
Add the milk to the bowl and mix it well.
Heat the oil in a ovenproof frying pan and fry the onions over a high flame for about 4 minutes until they started to brown.
Add the olives and tomatoes and stir gently.
Turn the heat to medium and cover the pan with a lid.
Cook them for 2 minutes until the tomatoes start to soften.
Pour the beaten egg into the pan.
Wait until it begins to set.
Cook for about 2 minutes. Make sure that it is runny inside but also half cooked.
Spread the feta cheese out on the pan.
Put the pan under grill for 5 minutes.
When the omelette is golden in color and puffed up nicely, cut it into wedges.
Garnish with some cherry tomatoes.

Now it is ready to be served.
Serve it with your choice of toasted bread.
It tasted the best when it is served hot.
